Eggplant salad

Eggplant salad

I baked the eggplants on the baking tray, turned them on all sides, cleaned them and left them to drain for 2 hours.

I chopped the eggplant with a wooden knife. I put them in a bowl with finely chopped onion, mayonnaise and salt and chewed well.

Good appetite.

I served eggplant salad with tomatoes and bell peppers.
