Ingredients

  • 1/2 Cup butter
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 1/2 Cup ketchup
  • 1 Cup vegetable oil
  • 1/4 Cup sugar
  • 1/4 Cup Worcestershire sauce
  • Juice from 1 lemon
  • 2 Teaspoons Tabasco brand Original Red Sauce
  • 1/2 Teaspoon dry mustard

Directions

Melt the butter in a medium saucepan over medium heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and cook 1 minute longer. Stir in the remaining ingredients and bring to a low boil. Reduce the heat to low and simmer 15 to 20 minutes, stirring occasionally.

Is traditionally a bold, spicy, homemade barbecue sauce recipe. A Texas barbecue sauce recipe reflects the diverse cultures that tamed that wild territory.

Developed mostly by the ranch cooks, and "chuck wagon" cowboy cooks with cattle drives, Texas barbecue sauce ingredients included basic spices, available indigenous peppers, and often boiled black coffee when the trail water was suspect.

Texas is the birthplace of the American cattle ranch ("station" or "run", for non-American speakers). Texas is beef, and the recipes have evolved to compliment their love for the "brisket".

Texans barbecue beef over a low heat, slow roasted over hardwood coals (mesquite, hickory, etc.) for many hours. The "Cookin' Cousins" follow this tradition with the belief that.

Old Time Texas Barbecue Sauce

  • 2 cups chopped onions
  • 1 cup strong black coffee
  • 1 cup ketchup
  • 1 cup worcestershire sauce
  • 1/2 cup brown sugar
  • 1/2 cup cider vinegar
  • 1/4 cup hot chili peppers, minced*
  • 3 tablespoons chili powder (adds flavor without heat)
  • 6 cloves garlic, minced
  • 2 teaspoons salt

Simmer about 25-30 minutes, then puree in blender to help bring out all of the flavors.

Note:We prefer the dried chilies available in small plastic packages, found in most grocery stores today. When reconstituted in warm water (about 10-20 minutes) they provide a rich, smokey flavor that fresh chilies do not have.

A basic guide to the chili's used in a Texas barbecue sauce recipe, and their relative "heat factor":

  • Anaheim (mild)
  • Jalapeno (or the smoked version, Chipotle) (medium)
  • Serrano (medium-hot)

Amarillo Barbecue Sauce

  • 1 can beer (any beer will do, but why not use your favorite?)
  • 1 cup ketchup
  • 1/2 cup brown sugar (Turbinado is our preference)
  • 2 cups chopped onions
  • 1/4 cup hot chili peppers, minced*
  • 1/4 cup lime juice
  • 2 tbsp chile powder
  • 1 tbsp olive oil
  • 1 tbsp Worcestershire
  • 6 cloves garlic, minced

Combine ingredients in a saucepan. Bring to a boil, then reduce heat to simmer for about an hour, stirring occasionally.

Lone Star Barbecue Sauce

  • 16 oz can tomato sauce
  • 1/2 cup (4 oz) beer
  • 1/4 cup (2 oz) apple cider vinegar
  • 2 tbs brown sugar (or turbinado)
  • 1/2 fresh onion - pureed, or 2 tbs onion powder
  • 6 fresh garlic cloves, minced or 1 tbs garlic powder
  • 2 tbs Worcestershire sauce
  • 1 tbs coarse black pepper (preferably fresh ground)
  • 1 tbs paprika
  • 1 tsp Tobasco sauce
  • 1 tsp chili powder
  • 1 tsp dry mustard
  • 1 tsp liquid smoke (this is optional as properly barbecued beef is its own reward!)
  • 1 tsp salt

Combine ingredients in a saucepan. Simmer about 25-30 minutes, then puree in blender to help bring out all of the wonderful flavors.


Although there is a little bit of sugar and honey to cut the acidity of the mustard and vinegar, this is not a super sweet sauce like you might be used to if your usual choice is the thick red stuff from a bottle ( which by the way, I also love and am not hating on in any way.)

I really like to kick it up a little with some spice as well, but the cayenne is totally optional and feel free to leave it out if spice isn't your thing.

One of my favorite things about Carolina Gold Sauce is how it pairs perfectly with pulled pork to cut through the fat and balance it all out.

Bonus: as far as barbecue sauces go, it's not completely tragic in terms of nutritional value either. There's a little bit of sugar and honey, but my mustard barbecue sauce recipe has no added oil or fat, and it's low in calories as well.

Carolina Gold can be used on so much more than just plain barbecue as well.

It's delicious as a dip for sweet potato wedges, a fun option for tossing hot wings in, and can even be brushed over baked salmon!

Ingredients

  • 1 ½ cups ketchup
  • ½ cup apple cider vinegar
  • ¼ cup packed light brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Whisk together all ingredients in a medium saucepan. Cook over medium, whisking occasionally, until ingredients are combined and sauce is just starting to simmer, 2 to 3 minutes. Cool to room temperature, about 30 minutes. Store in an airtight container in refrigerator up to 3 weeks.


Lone Star Steakhouse Ribs And BBQ Sauce

***sauce***
1 Pint ketchup
1-1/2 Pints water
1/3 Cup flour
1 Tablespoon salt
4 Teaspoons sugar
2-1/2 Teaspoons paprika
1-1/2 Teaspoons pepper
1-1/2 Teaspoons chili powder
1 Tablespoon prepared mustard
1-1/2 Teaspoons liquid smoke
1 Cup Worcestershire sauce
black pepper
paprika
salt

Recipe

Season the ribs with above mixture. Place ribs on the grill in any type of covered smoker or Barbecue pit, keeping away from direct heat so that the smoke does the cooking. Cook very slowly for 1 1/2 to 2 hours or until meat comes away from bone easily. During the last 15 minutes baste both sides of ribs with sauce. Cut ribs and serve.

To make sauce, combine ketchup and water in a large pot and bring to boil.
Mix dry ingredients. Add mustard, liquid smoke, and half the Worcestershire sauce. Stir into paste then add the remainder of Worcestershire sauce. Pour this into heated mixture and boil slowly for 20 minutes. Refrigerate any unused portion. Keeps for several weeks.

  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper, or more to taste
  • 1/4 teaspoon ground cloves

Does anyone have the lonestar bbq sauce recipe they use on the cajun chicken.

1. Put chicken breasts, skin side up in a single layer in a shallow glass or ceramic dish.

2. In a small saucepan over low heat, combine vinegar, salt, garlic, brown sugar, black pepper, butter, onion, mustard, lemon juice and chili powder. Simmer for 5 minutes and remove from heat.

3. Add to the saucepan the chili sauce, Worcestershire sauce, and beer. Bring to a boil and remove from heat.

4. Brush the chicken breasts with the barbecue sauce and let stand at room temperature for 30 minutes.

5. Prepare the barbecue or oven broiler. Place the chicken breasts, starting bone side toward the heat source. Baste frequently and turn several times during the cooking process. Cook for 8-10 minutes, or until the barbecue sauce turns brown and crispy.

NB Remember to rub chicken with cajun seasoning, first.

Dark Chile Powder 1/2 cup
Cayenne Pepper 1/2 tsp.
Ground Cumin 1/2 tsp.
Ground Oregano 1 tsp.
Ground Black Pepper 1 tsp.
Granulated Garlic 1/2 tsp.
Salt 1 tsp.
Red Chile BBQ Sauce
Peanut Oil 2 Tbsps
Diced Onion 4 ozs.
Garlic Cloves (smashed) 5 each
Dried Guajillo Chile Pepper 5 each
Canned Chipotle Peppers 2 ozs.
Pineapple Juice 3/4 cup
Cider Vinegar 1/4 cup
Ground Cumin 1/2 tsp.
Dried Ground Oregano 1/2 tsp.
Lone Star Texas Beer 1 cup
Commercial BBQ Sauce 2 cups

Method
Clean Guajillo chilies discarding seeds and stems and soak in hot water one hour. In saucepan, cook garlic and onion in oil until onions are well caramelized. Place in blender Guajillo chilies, Chipotle chilies, pineapple juice, cider vinegar, cumin and oregano. Blend until all ingredients are pureed. Pour mixture over caramelized onions. Bring to a boil and reduce by about 10%. Add BBQ sauce and beer. Boil and reduce approx. another 10% until sauce is of the right consistency.

Southwest Spice Rub
Sift all dry ingredients together and store in a clean spice container.
Red Chile BBQ Sauce

Place in blender Guajillo chilies, Chipotle chilies, pineapple juice, cider vinegar, cumin and oregano. Blend until all ingredients are pureed. Pour mixture over caramelized onions. Bring to a boil and reduce by about 10%. Add BBQ sauce and beer. Boil and reduce approx. another 10% until sauce is of the right consistency.

1-cup of Hot Sauce (Frank's or Texas Pete works best)
2-tablespoons of Cayenne Pepper
1-cup of Chili Powder
2-tablespoons of Black Pepper
4-cups of Brown Sugar
1-tablespoon of Curry Powder
1-stick of butter (if you want too)

Cook over medium heat and stir often to prevent sauce from sticking to the bottom of the pan. Add as much water as you want to thin it out. Cook for about 30 minutes. (Use only quality products--the cheap stuff ruins the taste)

Tennessee-Style Barbecue Sauce

Ingredients

Combine all the ingredients in a small saucepan. Cook and stir over low heat until the sugar melts and the ingredients are blended.

Lower the heat and simmer about 10 minutes. Makes about 3-1/2 cups.
