Easter with cake dough

It is recommended that the ingredients be at room temperature.

Mayan preparation

Dissolve the yeast in warm milk (not hot !!!). Use about 50-75 ml of milk. Add 1-2 tablespoons of flour and one tablespoon of sugar and mix.

Let rise for 10-15 minutes or until it doubles in volume.

Sift flour.

Over the sifted flour we put the raised mayonnaise, then the yolks, salt and lemon peel.

Put the sugar in the warm milk and mix until the sugar dissolves.

Pour the milk little by little and mix.

If the dough is harder then we can add milk.

Gradually add the melted butter and then cooled. Stir.

Little by little we add the oil so that it is incorporated as well as possible in the dough.

The resulting dough should be a little soft and sticky.

Cover the bowl in which we kneaded the dough with a kitchen towel and let it heat, raising it for about 1 hour.

During this time we take care of the filling.

Beat the eggs well.

Mix the cottage cheese with (one by one and mix each time) eggs, sugar, vanilla sugar, rum essence, lemon peel, semolina and raisins.

When the dough is ready, take it out on the floured work table and divide it in two.

In a round tray, with a diameter of 30 cm, put baking paper then place the dough on the bottom of the tray, stretching it with your fingers. Prick the dough with a fork from place to place so as not to allow the dough to rise too much when baking .

Around the tray we place the braided cord.

Fill with the mixture that we "made" above. Beat well an egg with which we grease the Easter. Sprinkle with almond flakes. Put the Easter in the preheated oven at 180 degrees for 45-50 minutes until it browns nicely and is good. done. (we do the toothpick test). Let it cool and then we can slice.
