  • 500g cheese tortellini
  • 600g tomato pasta sauce
  • 450g white sauce or cheese sauce
  • 275g frozen chopped spinach, thawed and squeezed dry
  • 1 tablespoon Italian seasoning, such as Barts (or to taste)
  • salt and pepper to taste
  • 225g grated mozzarella cheese
  • 4 tablespoons freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning

  1. Bring a large pan of lightly salted water to the boil. Add tortellini and cook according to packet directions; drain.
  2. Adjust oven rack to the highest position and preheat the grill. Generously butter or grease a 20cm baking dish.
  3. Bring both sauces along with spinach and 1 tablespoon of Italian seasoning to a simmer over medium-high heat. Reduce heat to medium-low, and simmer for 10 minutes. Stir cooked tortellini into sauce, then pour into prepared baking dish. Sprinkle with mozzarella cheese, Parmesan cheese and remaining 1 teaspoon Italian seasoning.
  4. Grill for a minute or two until cheese has melted and turned golden brown. Serve straightaway.


If you don't have Italian seasoning (with salt added), use dried Italian herbs instead and add salt and pepper to taste.

Parmesan cheese

Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

Like many other reviewers, I added extra tortellini. In fact, I tripled it. I bought 2 19oz packages of frozen tortellini and used 1 1/2 of them. I used the same amounts of sauce, but rinsed the jars with a couple oz of water which I mixed in. I also baked the tortellini for about 20 minutes at 350 degrees F covered, then added the cheese on top and baked about 10 more minutes uncovered. This is a very tasty dish. Hubby thought there was too much "green stuff", but I really liked the spinach. It's all in your taste.-29 Mar 2008

I am happy to be the first to rate this recipe. It was really good. I mdae it for company the other day. I served it with some procuitto wrapped asparagus and my guests thought I had worked on a gourmet meal all day. They asked for the recipe and took home the leftovers. This recipe was not only delicious, but incredibly easy to make (hence the name, I suppose). My only suggestion is to increase the amount of noodles used. There is too much sauce for the small package of tortellini. We solved this problem by dipping garlic bread in the sauce. I bet it would also be great if you substituted the tortellini with penne noodles.-20 Mar 2007

Baked Tortellini Casserole is an easy dinner recipe that the whole family will love! This is my favorite dump-and-bake recipe. The only thing you need to cook is the Italian sausage, everything else cooks in the oven.

You can adapt each ingredient depending on your own tastes and what’s budget friendly near you. You can pick any tortellini or ravioli you like, as well as mix up the pasta sauce to whatever your family enjoys.

You can also add in more ingredients such as parmesan, seasoning to taste and cook up some vegetables to include in your lasagna.

You could even turn it into a meaty meal by adding cooked beef mince or sausages to the pasta sauce layer.

Making the lasagna is really easy – you simply layer the pasta sauce, tortellini and cheese for the quickest, easiest, laziest lasagna like meal experience.

Tortellini Lasagna Recipe

  • Jar of Pasta Sauce
  • Package of Tortellini
  • Grated Cheese
  1. Preheat the oven to 180C/350F and lightly grease a baking dish.
  2. Pour a layer of pasta sauce on the base of the baking dish.
  3. Top with a layer of tortellini.
  4. Add a layer of grated cheese.
  5. Repeat with a second layer of sauce, tortellini and finally grated cheese.
  6. Place in the preheated oven for 35 to 45 minutes or until golden on top and cooked through.
  7. Serve and enjoy!

I like to serve the lasagna with a side of greens to balance the cheesy richness of the dish.

Make It A Freezer Meal

Prep &ndash Another thing I love about this baked cheese tortellini recipe is that it&rsquos also easy to freeze. I like to triple the recipe and freeze it in disposable baking pans.

Separate &ndash I make it all just the same, but save the bread crumbs in a separate baggie in the freezer so they don&rsquot get soggy.

Heating &ndash When I&rsquom ready to bake it, I sprinkle the bread crumbs on top and stick it in the oven, covered, for about sixty minutes. Then bake it for another 20-30 minutes uncovered. I&rsquove made this baked cheesy tortellini recipe countless times, and have always had rave reviews!

  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons all-purpose flour
  • 2 ½ cups low-fat milk, heated
  • 1/2 cup grated fontina cheese, divided
  • ½ teaspoon ground nutmeg
  • Salt & freshly ground pepper, to taste
  • 1 pound fresh or frozen cheese tortellini, preferably low-fat (see Tip)
  • ¼ cup fine dry breadcrumbs
  • 2 tablespoons freshly grated Parmesan cheese

Preheat oven to 350 degrees F. Coat 6 individual gratin dishes or a 1 1/2-quart shallow baking dish with cooking spray. Put a large pot of water on to boil for cooking pasta.

Heat oil in a large saucepan over medium heat. Add flour and cook, whisking constantly, for 1 to 2 minutes. Add hot milk and bring to a simmer, whisking, until smooth and slightly thickened, 3 to 4 minutes. Remove from heat and add 1/4 cup fontina and nutmeg, stirring to melt the cheese. Season with salt and pepper.

Meanwhile, cook tortellini until just tender, 6 to 8 minutes or according to package directions. Drain and rinse well.

Combine the tortellini with the cheese sauce and toss. Transfer to the prepared dishes or baking dish. Top with the remaining 1/4 cup fontina. Combine breadcrumbs and Parmesan and sprinkle evenly over the tortellini.

Bake the tortellini until golden and bubbly, 15 to 25 minutes. Serve immediately.

Make Ahead Tip: Prepare through Step 4 cover and refrigerate for up to 2 days or freeze for up to 6 months. Thaw in the refrigerator before baking.

Equipment: 6 individual gratin dishes or a 1 1/2-quart shallow baking dish

Storage smarts: For long-term freezer storage, wrap your food in a layer of plastic wrap followed by a layer of foil. The plastic will help prevent freezer burn while the foil will help keep off-odors from seeping into the food.

Baked Tortellini Casserole

This one is really the perfect meal for busy families. And right now, we are super busy at the Smith House. So it’s nice to have these quick and easy recipes we can pull together in less than an hour. This one only takes 30 minutes to bake.

I usually keep these ingredients stocked in my kitchen for this one because my family really likes it. Plus, I can actually use most of these ingredients if I want to make some of my other favorite go-to meals, too. So I toss this together and serve it with a side salad and maybe breadsticks.

You may already have these ingredients in your pantry and fridge:


20 oz. pack of fresh cheese tortellini**

3 cups of shredded mozzarella cheese

Here is how I like to make this one:


Preheat oven to 350 degrees.

Sauté onions in olive oil, then add ground beef and brown.

Drain ground beef and mix in the spaghetti sauce, tomatoes, and a little salt and pepper to taste.

Stir in the tortellini and about half of the mozzarella.

Sprinkle the remaining cheese to cover the top.

Cover with foil and bake for 30 minutes.

*My family loves the Ragu Super Chunky Mushroom spaghetti sauce. So if I mention spaghetti sauce in my recipes, it’s this one unless otherwise mentioned.

**For this recipe, I used the three cheese tortellini. Although I’m sure other varieties would taste great, too. Basically, I go for what’s on sale!

Red and White Tortellini

This super simple recipe for red and white tortellini uses just five ingredients and takes just five minutes to put together. We've served it to ​company - it's that good!

This is one of the recipes that we use when we're too tired to cook and just don't want to face the kitchen anymore, but don't want to leave the house. We often add a one pound bag of frozen fully cooked meatballs to the casserole just put them on top of the tortellini and bake as directed.

If you want to keep this recipe vegetarian, just use vegetarian meatballs! Or you could saute some onion, garlic, and bell peppers in a bit of olive oil before mixing with the tortellini and sauces. But that would make this recipe more than five ingredients! And this recipe is really perfect just as it is.

We like to serve this recipe with a nice crisp green salad tossed with some fresh sliced mushrooms and some cubed avocado or cherry tomatoes. A fruit salad would also be delicious with this super simple dish. For dessert, offer some ice cream, drizzled with chocolate sauce and caramel sauce, and topped with toasted pecans, for the perfect end to this easy but wonderful meal.

Storing Leftovers

This Chicken, Spinach and Artichoke Baked Tortellini is best served when it is fresh and warm. The leftovers are still tasty, but not as good as when it was fresh. The pasta will soak up some of the sauce once it’s cooled and refrigerated.

Any leftovers you do have can be stored in an airtight container in the fridge for 3-4 days. To reheat, add a little extra Alfredo sauce or milk to loosen it back up. You can also add a little more cheese if needed!

Easy Baked Tortellini and Meatballs

If your family is anything like mine, then a consistent dinner favorite is always pasta. Both my husband and son are big-time pasta lovers, and if they had it their way, they would eat it for dinner every night of the week. One of their favorites that they are always asking for is tortellini. Tortellini is typically available in both the refrigerator and freezer section of the grocery store, so I try to stock up when I can. Whenever they’re ready for delicious, easy casserole recipes , I will make this Easy Baked Tortellini and Meatballs.

This simple pasta just takes a few minutes to prep before sliding it into the oven. In addition to store-bought tortellini, this recipe also uses frozen, store-bought Italian meatballs. If you have a favorite meatball recipe, feel free to use it. However, when I need something quick and easy, using refrigerated pasta and frozen meatballs becomes a big time-saver.

I typically start by defrosting the meatballs in the microwave for a couple minutes, just to get them to thaw a bit. I defrost these right in the baking dish. To the defrosted meatballs, I’ll add the tortellini, and a jar of marinara sauce and a can of diced tomatoes. Simply stir these together to coat the pasta and meatballs evenly in the sauce and tomatoes.

In a separate bowl, I then stir together the ricotta cheese, Italian herbs and garlic salt. Then in small dollops, add the ricotta mixture to the top of the pasta. Just before putting this delicious pasta in the oven, I then add plenty of mozzarella cheese for the ultimate cheesy topping. The cheese bakes beautifully and becomes slightly golden, covering the delicious pasta and meatballs below it.

This pasta takes about 30 minutes to bake. Just enough time to heat the pasta and meatballs through and melt all the cheeses together. Serve with a sprinkling of shredded Parmesan cheese for even more cheesy goodness!
