Orange muffins

In a large bowl rub eggs with sugar, add yogurt, butter and orange powder. Separately incorporate the baking powder into the flour and add to the wet composition. Stir from the bottom up until smooth.

Pour the composition into muffin tins, lined with special paper, add in each, a slice of orange and put in the preheated oven for 20-25 minutes.

They can be served plain or powdered with sugar, as I chose.

When all is homogenized we stop. Put the special papers in the muffin tray, then fill them 3/4 with the prepared mixture. Bake for 20-25 minutes. When they are ready, we take them out of the molds and let them cool.

Meanwhile, prepare the frosting / topping. Mix the butter at room temperature until creamy. Add the powdered sugar and start mixing at the lowest speed so as not to spread all the powdered sugar. Mix for at least 10 minutes until it becomes like a cream, add the cream cheese, add the peel and orange juice and then mix for another 2 minutes. Put the cream in a pos provided with dui and leave it in the fridge until the muffins cool completely, preferably at least 1 hour. Then decorate the muffins with cream and pieces of orange. We keep them cold. Enjoy!

Chocolate and orange muffins

Prepare the muffin tins with paper and with the help of a spoonful of ice cream, pour the composition.

Place in the preheated oven at 180 ° C for 15-20 minutes.

For the cream, mix the mascarpone, melt the milk chocolate and mix it with the mascarpone and powdered sugar. Mix until you get a homogeneous cream.

After removing the muffins from the oven, let them cool and then the ornaments with the prepared cream, using a posh. You can also decorate with orange slices.

Delicious chocolate muffins with orange & # 8211 A real treat!

The new project in which I got involved and which I hope to be able to tell you about soon and only for good, made me start a beautiful and interesting journey through American gastronomy. Every day I discover new things and I realize that I underestimate the gastronomy of this people. Ah ... and if I still have the opportunity to make new discoveries, it's obvious that I don't keep them just for myself, but I share them with all of you.

Today I want to give you a recipe that combines two tastes that I adore: the taste of chocolate and the taste of orange, tastes that for me mean family, childhood, celebration, harmony.

Ingredient:

  • -225 g of flour
  • -50g of bitter cocoa
  • -125 ml of milk
  • -2 oranges
  • & # 8211 3 teaspoons baking powder
  • & # 8211 120 g brown sugar
  • & # 8211 1 pinch of salt
  • & # 8211 150 g of large chopped chocolate
  • & # 8211 2 eggs
  • & # 8211 90 g butter

For the glaze:

  • & # 8211 50 g of dark chocolate
  • & # 8211 25 g butter
  • & # 8211 2 tablespoons water
  • & # 8211 175 g powdered sugar

First of all I started the oven at 200 degrees C and I prepared a tray for 12 muffins in which I put the special muffin papers.

I peeled the 2 oranges and finely chopped the peel (only the orange part), and then I squeezed the oranges keeping the juice aside. I measured the amount of orange juice and added more milk until I reached 250 ml of liquid.

I mixed in a bowl flour, cocoa, baking powder, salt, chopped chocolate and brown sugar.

In another bowl I beat the eggs a little, I mixed them with the milk mixed with the orange juice and the melted butter. I then added the liquid ones in the center of the dry ingredients. I lightly amalgamated everything then filled the muffin tins (only 2/3 of the form) and baked for 25 minutes.

I did the classic toothpick test.

For the icing, I put the broken chocolate on the bain marie in small pieces together with the butter. I let them melt. I took the mixture off the heat and added the powdered sugar while stirring.


Preparation Fluffy muffins with oranges:

In a large bowl, mix the soft butter, left at room temperature, with sugar and a little vanilla essence. Then add the eggs, one by one, mixing well after each one. Add flour mixed with baking powder and mix until smooth. Then add the milk little by little, and mix until smooth.

  • the composition should be like a thick cream, like cake. If it is too thin, add a little more flour
  • you can adjust the amount of sugar depending on how sweet the oranges are or according to your sweet preference

At the end we incorporate the grated orange peel and the chocolate beans.

Prepare the tray for muffins with special paper baskets. Put from the composition, about 2 tablespoons, about 3/4 of the height of the paper basket.

Put the tray in the oven over medium heat (or 160 degrees electric oven with ventilation) for about 30 minutes, until the muffins are browned.

Muffins with oranges & lemons & # 8211 easy to make and good to lick your fingers

This muffin recipe is based on a recipe from "Jenny Colgan's Meet Me At The Cupcake Cafe", one of my main sources of inspiration when it comes to things that don't make too much of an impression on my gray matter. These muffins are full of vitamin C and have more vegetable fiber than a regular sweet snack, since a whole orange was used to create them.

I was thinking of enriching them with lemon slices, for which I found a recipe - they looked so cute, transparent and shiny. The efforts I made led to the creation of the perfect lemon slices, but…. They were far too sour. Taste can never be sacrificed for a beautiful look in my kitchen.

Luckily, I had a packet of sweet, soft jellies hidden in a closet. It doesn't look as sophisticated as those lemon slices would have looked, but I think Nelson Mandela is a type of man who wouldn't get upset because I did something more practical.

I used my special muffin tray this time to save more power, as it heats up very quickly and it only takes 5 minutes for a group of 8 small muffins - according to the original recipe, regular muffins would it took 50 minutes to prepare. I've never tried that size, but it seems a little excessive. Certainly no one should wait almost an hour for some muffins.

For more lemon and orange muffins, you will need:

  • A sliced ​​orange, with the peel. Your kitchen will smell great
  • A cup of melted butter
  • A glass full of white sugar
  • 3 eggs
  • 2 cups of flour

Don't forget to cover the tray with a cooking solution before heating it - I don't trust how the trays are covered today. Teflon? It looks like you should clean the tiles.

While the magic muffin machine heats up, mix the sugar, melted butter and eggs together, add the chopped orange, then add the flour. Wasn't that easy?

Bake until the tip of a knife comes out of them clean and then leave to cool.

This is the moment when you forget to make candied lemon slices because they are dirty. Instead, you can mix a lot of powdered sugar (maybe 500 grams? I never measure) with freshly squeezed lemon juice to form a glaze that can be easily spread (ok, lemon juice can also come from a I just had a lemon that was around and she felt alone). Spread this icing over the chilled muffins and put a sweet jelly on top for beauty.

- Separate the egg whites from the yolks, mix the yolks with the salt and half the amount of sugar

- Add vanilla, orange peel and mix well until a light cream is obtained

- Then gradually add the melted butter and orange puree and mix again

- Now thicken the composition, adding baking powder and flour gradually

- Add the fried walnuts and hazelnuts, leaving a small part for decoration

- Separately, mix the eggs with the other half of the sugar until a hard meringue is obtained

- Incorporate the egg whites into a light dough, using a spatula

- Fill the muffin tins, leaving 1/3 room for growth and decorate with pieces of roasted hazelnuts

- Bake in the preheated oven for approx. 35 minutes is tested with the toothpick.
