Dough: Sift the flour into a bowl. Separately put the yeast with a teaspoon of sugar from the 25 g and a teaspoon of flour and 2 tablespoons of warm milk and leave for about 10 minutes until it starts to make bubbles. Melt the butter and mix it with the egg and the rest of the sugar, then pour the warm milk and mix well, then add the yeast and mix well. Sprinkle the salt over the flour, make a hole in the middle and pour the mixture of egg, milk, butter, yeast, start mixing well, add warm water, then knead, add the oil and knead until the oil is incorporated. Knead for about 20 minutes after incorporating the oil, put the dough back in the bowl, cover the bowl with a towel and leave to rise for about 60 minutes. While the dough rises, we make the fillings.
Meat filling: We clean the green onion, wash it and cut it into small pieces, then put it in a frying pan with a little oil and salt, when it starts to soften, add the meat and let it cook until it changes color.
Cheese filling: Grate the Parmesan cheese and the sheep's cheese, then add the egg and the egg white, mix well and finally add the chopped parsley.
After the dough has risen, divide it into two equal parts, weigh it and obtain 2 pieces of 375 g. Place baking paper on the worktop and spread the first piece of dough, a round shape the size of the stove tray (a stove of this type new, bigger, for smaller size stoves you must make two pies, ie divide the dough into 4 pieces), with the help of a plate we make a round where we will put the meat filling, on the edge we place the cheese filling. Then we spread the second sheet and place it on top over the fillings. We place the plate in the center so we can cut the petals as accurately as possible. With the help of a sharp knife form the petals (seen in the photo), then take each petal lightly in your hand, fold the front edge and a side and then twist so that the unfolded part is on top, widen it a little to show like a petal. Lift the plate and prick the middle with a skewer stick, then grease with the yolk mixed with milk and sprinkle poppy seeds in the middle. Place the flower in the tray, then put it in the preheated oven at 180 g for 30-35 minutes. If it starts to brown too quickly, place a baking paper on top. Remove from the oven and serve hot and cold.
