It may sound impossible, but you can create crispy potato chips without deep frying or even baking. The answer is the microwave. Use a mandoline to slice the potato thin enough to crisp, and then just place the slices on parchment paper and zap until crunchy.

Crispy Potato ChipsHands-on time: 10 min. Total time: 30 min.

Ingredients• 1 medium purple sweet potato• 1 medium baking potato• 1 tablespoon extra-virgin olive oil• 1/4 teaspoon salt

Directions1. Cut 1 medium purple sweet potato (about 8 ounces) and 1 medium baking potato (about 8 ounces) crosswise into 1/8-inch-thick slices. Combine 1 tablespoon extra-virgin olive oil and 1/4 teaspoon salt in a large bowl. Add potatoes; toss gently to coat.

2. Cut a circle of parchment paper to fit a microwave-safe plate. Cover plate with parchment paper; arrange purple potato slices in a single layer over paper.

3. Microwave at HIGH for 4 minutes or until potatoes are crisp and begin to brown. Repeat procedure with baking potatoes, reusing parchment paper.

Note: Store these chips in an airtight container or zip-top plastic bag at room temperature for up to 3 days.

However since most restaurant chips are deep fried, they aren't the healthiest option. Luckily it is really easy to make an amazing crispy baked potato chip in your oven. It's the perfect snack or side dish and can be seasoned in so many different ways.

Depending on your oven and how you cut your chips, here are a few things to keep in mind. If your baked potato chips are all the same thickness, some may cook faster than others. Just keep an eye on them and pull off any cooked chips before they burn. Some people have trouble with their chips sticking to the pan. To avoid that, I recommend using parchment paper or a wire rack. You can also use aluminum foil, just coat it in cooking spray first.

i guess there isn’t anyone who does not like chips recipe. we all like it. but prefer to buy it from the grocery shop. i guess the main reason could be the assumption that it is one of the complicated recipes. also, the other common assumption is it may need sophisticated instruments to prepare it. but trust me it is one of the simple and easy recipes to make. the only critical part for this recipe is the use of potatoes. basically you need to select a potato which has more starch and less of water content in it. generally, all red potatoes are good for any deep-fried snacks. particularly, you may use kipfler potatoes, dutch cream & red royale potatoes are ideal for chips, potato fries and potato wedges recipe.

furthermore, i would like to add some more tips, suggestions and variations to aloo chips recipe. firstly, as i was explaining earlier, you need to choose those potatoes which are rich in starch content. yet we do not need for this recipe and hence you have to dip the sliced ones in cold water to remove excess starch. secondly, you need to be cautious while deep frying. the oil has to be hot and the deep frying has to happen in medium flame. also, once it is deep-fried, do not use a paper towel or tissue paper to remove excess oil. use a sieve to place the deep-fried chips, so that air can pass on both sides. lastly, store these in an airtight container for longer shelf life. it should last long for a week and may turn soggy afterwards as preservatives are not added.

Step 1. Wash and peel 2 potatoes. Alternatively, these can even be prepared with the skin, in which case you can move on to the below mentioned steps.

Step 2. Use a chips cutter/slicer to cut chip slices. If you do not have a slicer then you may use a peeler to cut the slices.

Step 3. Soak the slices in some water for about 10 minutes, to remove the starch from the potatoes. This makes the chips crispy.

Step 4. Now, place the potato slices on a towel to let these dry for 10 minutes. Be sure to place each slice separate from another to prevent slices from sticking.

Step 5. Now, tap gently using a towel.

Step 6. Heat some oil in a wok to fry the chips on medium heat. To check if the wok is hot enough, drop a few potato slices into the wok. Drop these one at a time, to prevent slices from sticking to one another. Once the the oil is ready, drop all the slices (one at a time) into the wok. Begin frying on medium heat.

Step 7. Change sides frequently to make sure chips are cooked thoroughly from all sides until crispy and golden in color. It usually takes about 5-6 minutes to frying these.

Step 8. Sieve these out and drain the excess oil to remove these from the hot oil once done. Crispy potato chips are now ready. Garnish the chips with some pepper and salt, and mix well. Alternatively, you may use red chili powder, paprika powder or cayenne pepper to flavor these. Wait till the chips cool down and then store these an airtight container. These can be stored for about 15 days.

  1. Slice potatoes using a spiralizer or mandoline into thin slices.
  2. Soak them in cold water for at least 30 minutes.
  3. Rinse and pat dry completely using a cotton towel or paper towel.
  4. Preheat the oven to 400F.
  5. Line a baking pan with parchment paper.
  6. Arrange potato slices on a baking pan evenly without touching or overlapping each other. May need 2-3 batches depending on how big the baking pan is.
  7. Use a pastry brush to lightly grease potatoes slices with olive oil on both sides. Sprinkle with salt and pepper.
  8. Bake for 8-10 minutes. Rotate potato slices and bake for additional 6-8 minutes or until crispy.
  9. Right before serving you can sprinkle with herbs and seasonings of your choice.
  10. Allow them to cool down for few minutes before devouring them.

Preparation

Step 1

Slice potatoes about ⅛” thick (a mandoline helps). Place in a large bowl, add cold water to cover, and stir to release starch drain. Repeat until water runs clear. Return potatoes to bowl cover with ½ cup distilled white vinegar and 6 cups water. Let sit at least 30 minutes or up to 2 hours. Drain pat dry.

Step 2

Fit a medium heavy pot with thermometer pour in oil to measure 4”. Heat over medium-high until thermometer registers 300°.

Step 3

Working in 6 batches and returning oil to 300° between batches, fry potatoes, turning occasionally to cook evenly, until golden brown and crisp (oil will have quit bubbling), about 5 minutes per batch. Using a spider or slotted spoon, transfer to a paper towel–lined wire rack. Season with salt.

Step 4

DO AHEAD: Potatoes can be fried 6 hours ahead. Keep at room temperature.

How to Cook Potato Chips in the Microwave

Parchment paper on a microwave-safe plate is required to be successful. If you don’t use parchment paper, the potato chips will stick to the plate and break into small pieces upon removal from the plate.

It is also important to toss your potato slices with spices before you microwave them, otherwise, the granules will fall right off the chips.

When the spices are put on the slices before cooking, the potatoes will absorb the flavors as they cook and make very tasty chips.

There are many different types of microwaves, so be prepared to experiment. We estimate that the chips will take around 5-8 minutes to cook.

Cooking time will depend on the power setting of the microwave and the thickness of the potato slices. The first time you make this recipe, set your microwave cook time to 10 minutes, and watch the potatoes closely while they’re cooking.

You’ll want to watch for the potatoes to brown, once they do, they’re done cooking and you can stop the microwave. Make note of how long it took to cook the potatoes in your microwave and write it down!

Tips and Variations for Crispy Potato Chips

  • Dry: Make sure you dry off your potato slices completely. This way they don’t steam first, they just cook and crisp!
  • Check it: As you check them make sure you remove any that are done, so they don’t burn while the others finishing crisping.
  • Thinner is better: If you have a mandolin, use it, it’ll make sure they’re good and even and thin. If you don’t, you can still make these potato chips. Try to keep the slices as even as possible. They will be thicker so don’t hesitate to cook them a bit longer.
  • Potatoes: Use Russets or Yukon, or Golden potatoes for the best results. Red potatoes have too much starch to get them good and crisp.
  • Oil: Make sure the oil is high smoke, canola and avocado are also good options. Avoid aerosol type sprays with additives, they can gum up your air fryer over time.
  • Flavor Variations: Just about every time I turn around there is new flavor of potato chip out there. Feel free to experiment with your own flavors. Add BBQ seasoning, ranch, chili or chipotle chili powder. Even make your own cheddar potato chips with cheese powder. YUM! Toss the flavorings on the potato chips as soon they’re done cooking.
