  1. Soak dates in warm milk for 1 hour.
  2. Preheat the oven to 180 C / Gas 4. Grease a 23cm tin (9 inch) with olive oil.
  3. Add all the other ingredients, except flaked almonds, to the date and milk mixture. Turn into the greased dish. Sprinkle the flaked almonds on top.
  4. Bake in the centre of the oven until golden in colour, 30-35 minutes.
  5. Place on a cooling rack and allow to cool before serving.

Combine the butter, dates, boiling water and instant coffee granules in a large mixing bowl. Mix to combine and leave for 30 minutes for the butter to melt and the dates to soften.

Add the caster and dark muscovado sugar to the date mixture, stirring well to combine and to dissolve any lumpy brown sugar. Add the beaten eggs and mix again to combine. Sift the flour, baking powder and a pinch of salt into the bowl and mix until smooth. Add all but 1 tablespoon of the chopped walnuts and mix again. Scoop the mixture into the prepared tin, spread level and scatter the remaining walnuts and demerara sugar over the top.

Bake on the middle shelf of the preheated oven for 30 minutes, then reduce the oven temperature to 170C/150C Fan/Gas 3 and cook for a further 25–30 minutes, or until a wooden skewer inserted into the middle of the cake comes out clean. If the cake is browning too quickly, loosely cover the top with foil or baking paper.

Remove the cake from the oven, leave in the tin for 3–4 minutes, then carefully lift out of the tin and leave on a wire cooling rack until completely cooled.

Who knows why this date and walnut slice was dubbed “Chinese Chews.” I remember them well from my teenage years, the high density of fruit and nuts per square centimetre making them a luxurious treat. I have a battered and stained recipe book that was compiled by the Mothers Club of my high school and sold for the princely sum of 25 cents as a fund raising effort. It was published sometime between decimal currency being introduced into Australia in 1966 and my leaving school in 1970. It is a compilation of recipes, contributed by mothers of students at the school. My little recipe book reeks of how society has changed in the past 50 years. Mother’s clubs have been replaced by Parent Associations, each recipe contributor is acknowledged as Mrs, with their first initial followed by the surname. There are paid advertisements in the book for Junket tablets, products for the “hostess and housewife”, and a hardware store open on Saturday morning! I think it would be appropriate in today’s Australia to call this recipe Date and Walnut Slice, less exotic, but more politically correct. I have made a few minor changes to the original recipe.

Recipe Summary

  • 1 ½ cups rolled oats
  • 1 ½ cups sifted pastry flour
  • ¼ teaspoon salt
  • ¾ teaspoon baking soda
  • 1 cup packed brown sugar
  • ¾ cup butter, softened
  • ¾ pound pitted dates, diced
  • 1 cup water
  • ⅓ cup packed brown sugar
  • 1 teaspoon lemon juice

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.

In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.

Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

Did you know that January is hot tea month? As a Brit, I am from one of the biggest tea-drinking countries in the world. However some of my most memorable tea-drinking memories are actually from Morocco. I visited Morocco with my parents as a child and while there were some challenges (like navigating the souk/market), a few things still really stick in my mind.

Most of all, the smells, the food, the architecture and drinking mint tea.

I particularly remember tea being part of the rug-buying experience. Vendors would bring you into their store and sit you down with a glass of mint tea while they showed you as many rugs as possible before you either bought one or managed to extract yourself politely (or otherwise). Strangely, I don't particularly remember what if anything we ate with the tea, but I know these date walnut palmiers would go perfectly.

A French tradition in Morocco

Palmiers were introduced to Morocco when it was a French colony and are still very popular. Dates and walnuts are popular in Moroccan cooking as well, so I figured making date walnut palmiers would be a very fitting variation on the theme, bringing together local flavors that also pair perfectly with mint tea. Flatten out a sheet of puff pasty then crumble over the date-walnut mixture. Sprinkle on some sugar, roll it up, cut in slices then bake. You need to make sure you leave room for them to expand as they bake, but otherwise there's not much to note.

Date slice or date crumble has long been a family favourite with my Mum making an excellent example. I felt like giving it a go and thought a slight twist on the classic recipe would be fun so added walnuts and honey.

Dates (300g, stoned & chopped)
Plain Flour (250g)
Butter (250g)
Brown Sugar (50g)
Walnuts (100g)
Oats (50g)
Honey (2 tbsp)

• Place dates & honey in a saucepan over medium heat with a splash of water.
• Stir until the dates have become a thick, paste-like consistency.
• Crush half the walnuts and stir in. Set aside to cool.
• Meanwhile, combine flour and butter to make the crumble mixture (easiest in a food processor). It needs to resemble crumbs, don’t over-do it or it will become a ball of pastry.
• Blitz the other half of the walnuts into the crumble mixture, then stir in the oats and sugar.
• Place half the crumble into a greased 20x20cm square tin to form a base and press down.
• Spread the date mixture over the base and top with the remaining crumble, pushing down lightly.
• Bake for 25-30mins in a preheated oven at 170°C.

Notes:
I used half’n’half wholemeal flour, but it’s not essential.
